setting the modulation effect on a midi instrument

when you are using a software instruent with a MIDI keyboard how do you customize what the modulation wheel does for some sounds it just adds vibrato others it does like a big resonance sweep for some synth things, can you set this to change certain effects youve assigned to the instrument? Also can you do this in logic?
