original iPhone without SIM not working after 2.1 update

My girlfriend has a first-gen iPhone that she bought from a friend and had been using without a SIM as an iPod for the time being until she gets out of her other contract to activate it. She just upgraded to the 2.1 firmware and now it says to insert a SIM and connect to iTunes to activate. Any suggestions on getting it working again without the SIM without hacking it? Maybe just downgrade the firmware? Thanks!

I have an original first generation iPhone that has since been de-activated and used as an iPod when I upgraded to a new 3G. When I upgrade from 2.02 to 2.1, iTune gave me the error that it could not activate the phone. I was locked out of using it. The phone was in airplane mode before the upgrade. By using the slider to pretend to make an emergency call, I was able to disable airplane mode and it connected to my local WiFi network. I then reconnected it to iTunes. It activated and now works fine. So - do not upgrade in airplane mode.
