There is no em dash (or en dash, for that matter) on iPhone. With other keys, a tap-and-hold offers additional choices (e.g. ? gives ¿ as an option), it's something that Apple could implement.

Found it for you...as always, the Japaneese keyboard comes to the rescue.
If you add the Japaneese QWERTY keyboard to your list of keyboards, you can find it by hitting the ABC button, then the 123 button, then press and HOLD the bottom right .,-/ button. Then slide up to select the dash. After selecting you will be given choices for variants and one being the em dash.
And in case you didn't know, at the same ABC, 123 location, pressing and holding the number 1 and sliding to the left to pick the star...there are a lot of additional symbols such as heart, start, sun, raincloud, etc.
You are welcome. Many characters can be found in other keyboards. The Japaneese one seems to have the most. Can be tricky to find though at times. And for sure doesn't make it quick, but at least it is possible.
