Are you using a Mac or Windows? Where are your contacts to begin with? Are you using iTunes 4.9 or 5.0? I have Mac OS X 10.4.2 and iTunes 5.0 and my Address Book contacts do have their zip codes...
I have the same problem. Using Windows XP. Just installed itunes 5.0 & uploaded contacts from Outlook (not express). Only contacts that seem to be transferred are the entries that have email addresses associated with them, and these are all missing their zip codes. After the state, they all say "United States". Weird. I'm guessing apple hasn't worked all teh bugs out of the contacts compatability yet...? Please let me know if you find a solution.
Yes, I noticed this too. No zip codes and it only syncs contacts with email addresses. I'm using WinXP, Outlook 2003, and iTunes 5.0.1.4. I haven't tried doing things manually (with vCards) because that's a hassle. I really want to be able to sync my contacts as advertised, but having no zip codes makes it pretty useless, as I would need it for cases where I want to mail someone something.
I hope someone finds the solution for this soon...

I restored the Nano and downloaded iPodSync from
http://www.ipod-sync.com/. I exported my outlook contacts as individual vCards.
