If you have various folders with photos, create a parent folder that will contain nothing but the folders that include photos that you want transferred to your iPhone.

Place the folders that includes the photos that you want transferred to your iPhone in the newly created parent folder.

Under the Photos tab for your iPhone sync preferences, select Sync photos from:, and via the pop-up, navigate to the location where the parent folder is located that contains the folders with the photos that you want transferred to your iPhone, and select the parent folder.

Follow this by syncing.

The photos will be optimized for viewing on your iPhone first, followed by being transferred to your iPhone.

All folders that contain photos will be available at separate folders or albums on your iPhone.

All photos in all folders transferred will be stored in your iPhone's Photo Library, and the folders or albums below will include a pointer to the original photos stored in your iPhone's Photo Library. The photos are not duplicated.

This allows for selecting an album or folder to view the photos in that album or folder only. And you can view all photos available in all folders or albums by selecting the Photo Library.
