does anyone know if the Coby Electronics CV-890 Wireless Headphone are compatible with itunes on a mac with OS X?

The line level audio output plugs into the base unit/transmitter.
They should work with anything using line level audio output.

do you mean that some adapter would be needed rather than my MAC's built in bluetooth?
if so do you know of any bluetooth earphones that will work in stereo straight from the built in bluetooth?

Yes.

As far as I have found, Apple does not support quality stereo bluetooth.
