I currently have an iPhone 3g through AT&T and I just acquired an original 8GB iPhone for testing purposes. The iPhone 2g is on its way right now and I was wondering if the 2g iPhone will work if I put my iPhone 3G SIM card inside of it.

When I tried that once, it prompted me in plug the 2G iPhone into iTunes. Since I have my 2G iPhone set up as a touch, I did not want to chance it overwriting everything and forcing me to do a restore.
What will happen if I setup 2 different iPhones in my iTunes account? I just want to make sure that I won't lose any data on my iPhone 3G from connecting the 1st gen iPhone to my iTunes account and using it. If I have to I can always setup another iTunes account, but if I can connect the 1st gen iPhone to my account without screwing up my 3G I would like to do it that way.
You can have multiple devices linked to the same iTunes Store account (I have two iPhones and an iPod Touch using the same account, apps purchased once work on all three devices).
When I connected the 1st Gen iPhone to my computer it asked if I wanted to restore a backup from my 3G iPhone, why is this? Doesn't iTunes recognize that it is a 2G iPhone, and the backup is from a 3G iPhone? I'm wondering if it will screw up my 3G iPhone settings in iTunes. From what I understand from your post it won't, but I just have to be 100% sure so I don't mess up everything I have setup with my 3G iPhone.
iTunes knows it's an Original vs. 3G iPhone, yes. It will keep the devices separate. You are offered the option to restore from a backup of a different device precisely so you can have more than one phone, yourself. The 'normal' use of that is someone with an original iPhone who upgrades to the 3G and wants the same settings on their new phone. It also works well for replacement phones, and in your case, in 'reverse'. Note that one thing that is not restored from backup is network passwords (that's a security feature - those are restored in a Restore to the same device, but not in a Restore to a different device).
