You hit one of the inconsistencies between Pages and Numbers.

Numbers's text boxes automatically fit the contents.

Funny detail, here the OP seems to be annoyed by the unavailability of 'autofit' in Pages but yesterdays I received a message from an user annoyed by the autofit feature available in Numbers 😉

A few days ago I filed this report:

report ID# 6356946.

+Numbers is quite a perfect program to import AppleWorks Draw documents.+
+It accept documents with several pages in width which is unavailable in Pages.+

+So, it's a bit frustrating to hit some drawbacks.+

+(1) there is no way to remove completely the headers/footers as we may do in Pages.+

+This requires to set the inset of header/footer to zero then uncheck a box.+
+In Numbers we are just allowed to set the insets to zero.+

+(2) In Pages, when we activate the Fonts Panel Typography menu, we may use every ligature designed in the font in use.+

+In Numbers, only a subset of them is reachable.+

+(3) In Pages we may apply several kinds of borders to Text Blocks. In Numbers, we can't do that.+

+It would be fine to drop these three limitations.+

+And of course, may you deliver a tool importing AppleWorks Draw documents in Numbers which would be quite a perfect container?+
