I am not sure the iPod's processor could handle that. You might be looking at a hardware accessory, or at least one that supplements a microphone.

Just to add a bit more detail, Katy, Apple does not intend the iPod to be a platform for outside development - they intend it to be a media player, not a PDA - so no kits for developing any applications to run on the iPod have been released. Whether or not this will change at any point in the future I don't know, but I'd doubt that we'll see development support for anything other than external accessories anytime in the near future.
