So goes to Uninstall then Stops then does not actually remove itself?
You can try turning off User Access Control, rebooting, then removing. Just incase it was not giving you full permission to remove Apple Mobile Device Support.
You can also try downloading and using the Windows Installer Cleanup Utility
But if you have not done so yet, I would perform all Vista Updates, and they may have an updated for Windows Installer/Uninstaller that will help assist in removing Applications that will not remove properly.
