would i need to buy one from greece to be able to have greek ?
No. iPhones sold in Greece (or anywhere else) do not have any different support than what Apple publishes in the tech specs for its product. Greek is not yet available, also not in the iPod Touch
There might be a hack here:

thanks jason i filled out a form.. i always thought that languages where added as soon as the iphone was official in that country i guess i was wrong, i hope they hadd it in the next upgrade which will probably be some time now seing as they released so many firmwares so quickly from 2.0 to the current 2.2 firmware
i just found greek language in app store it costs money but maybe for the language you want there is something also? just until apple add it, whenever that will be, dictionary support would be amazing to but apple i guess dont feel the need to add them even though the iphone is official in that country :@
