Easiest way to do it is to consolidate the files. Highlight the region (audio file) in question, and then hold down alt/option+ shift + the #3 key (the 3 key above the letters, not the one on the number pad.) this will make all the regions, within the space you have selected, one continuous file.

Double click on the region you want to export, name it something you remember, and highlight this region.

Then, in the right side of you edit window, Right or option click on the bar that says "region list" It will give you an option to "export regions as files". If the regions that you have consolidated and renamed are highlighted, they should also be highlighted in the regions list, and be the only ones highlighted.

Then, export the tracks however you want to...(i.e file format, bit rate, sample rate, and so on)

the only drawback to this is that you will only export the raw audio files, and any inserts that you have on the track, or sends to any fx or whatever will not be consolidated. If you have inserts on your tracks that you need to keep, the only way you can do it is to solo and bounce each individual track.

I believe both aiff and wav files work in logic, and am pretty sure that they should be save as stereo interleaved files

hope that helped
