You can change the Auto-Lock in Settings> General> Auto-Lock.

"Auto-Lock
+Locking iPod touch turns off the display to save your battery and to prevent+

You can manually put the iPod screen to sleep by pressing the sleep/wake switch on the top of your iPod.

If the auto-lock or manual screen lock is engaged, your music will continue to play. You can display playback controls at any time when you’re listening to music and using another application—or even when iPod touch is locked—by double-clicking the Home button. You don't have to slide-to-unlock your iPod.

That's about as power-saving as you will get while still being able to listen to music.

Hi snowboarder: If you are listening to music, push the sleep button, music continues, display darkens, thus saving battery life.

Just use your sleep switch on the top of your iPod Touch, or set your auto-lock to the time that you prefer for your iPod to stay with backlighting. Another way to save power is to turn down the brightness. It actually saves a lot of power, even just sliding it down to half-way on the slider.
