Editing caf files

I wouldn't have thought it would be that hard but I should have known better... The more I continue to use apple products, the more things I find it incapable of doing... Maybe it's just me and my inexperience, therefore I ask you gurus for some assistance.

I have QuickVoice on my iPhone. I have recorded my daughter saying some cute things.

I want to do the following:

1. cut the first 5 seconds off the start of the recording (it has me telling her what to say) - I know I can do this in itunes however, every time I try to add it to the library it never appears (no message saying "can't import file" - nothing, I just select the file and nothing happens!!!)
2. I want to convert it to mp3 or something else to send to my family via email - there appears to be nothing available to do this either (again, itunes could probably fix this problem if it worked)
3. I want to set the sound as my default message tone however, the only way that seems apparent is to jail break my phone - How can I do this legally???
