Where do you store your important notes?

I have an old Palm Vx (Windows Version) where I store important notes like measurements for a furnace filter, meal recipes, etc. in the Palm software memo pad applet. Each memo is titled by the first line of text in the memo. The memos are listed in order of entry and displayed by title in a "right side" viewing pane where the preview of the selected memo is on the left side. I'm able to search these memos easily similar to spotlight.

I'd like to copy these memos into separate and searchable files or a similar memo pad applet that is offered in Leopard. It would be nice to password protect this info and possibly sync it to an iPhone.

I appreciate any thoughts or how one organizes such data that can be listed and searched easily, synced to an iPhone, and possibly password protected.
