how convert Pages doc to grayscale for postscript output?

I wish to create a grayscale postscript file, but i do not believe selecting black ink in the print preference will avoid the postscript file from being RGB. How do i do this?

G4, Mac OS X (10.4.11)

Go to Print and click on Copies & Pages. Scroll down and select SolorSync. Then Click on Quartz Filter and scroll down to Gray Tone. Then click on the PDF button and select Save PDF as PostScript.

I am giving your method a try. Clearly, it generates a gray-scale PDF, but it is not obvious how this would change the postscript file. For example, a B&W PSD file is much smaller than an analogous RGB file, but I see little difference in .PS files whether or not I do the Quartz conversion. I would have expected a bigger difference, based on the photoshop result. I will report back on the results after I hear from our printer. One additional question: does Pages 09 offer any different method, eg, the ability to create a gray-scale document from the get-go?

If you're looking for a smaller file size, you can use the same quartz filter menu to select Reduce File Size. As for Pages '09, I don't know, but I suspect not.

If you want to discard all color information Photoshop may be your best bet. Others may have more helpful solutions.
