This worked for me.
iphone 3gs / itunes10.5 / iOS 5.
It's because you have wifi sinc on something. When the iPhone/iPod/iPad is connected simply uncheck the "turn on iTunes when iPhone/iPod/iPad is connected" and it should stop opening.

I ejected my iPhone in iTunes and that fixed it. I think it is that open iTunes when this device is connected setting. I could probably uncheck that too. Regardless, this worked for me.

I have Logitech G15 keybaord, i unchecked Logitech Media Display and after reboot itunes works fine. Thanks for sharing this solution.

Had my ipad a few days now. The constant reopening of itunes was irritating, my fix was to log out of the itune store. no more auto opening.
I had this problem on Mac OS X 10.8.2 and iTunes 11.0.1.
I was able to fix it by opening Activity Monitor and then force quitting the AppleMobileDeviceHelper.
I read your post and turns out that is what is causing my problem as well. Have you been in contact with Apple? Have they offered a solution?

I simply deleted all files from the iTunes folder as mentioned above (not the folders of backups). iTunes now behaves as it should
i had his problem too but i use rainmeter with itunes so i just restarted that and i worked
Download the free program MALWAREBYTES and run a scan. I did and it found two items that I immediately had it remove (all very easy and straightforward). It cured my renegade itunes problem.
