How can i add music to my iphone from itunes without it taking all the music off of my iphone that is not in my itunes playlist?

It syncs (matches up). It will remove what you don't have setup in iTunes. Just how it is. The iPhone is an extension of your iTunes libary, and thus "syncs" with it.
Use multiple playlists.
If you have selected playlists chosen under the Music tab for your iPhone sync preferences and have various iTunes playlists selected to be transferred to your iPhone, if you deselect a playlist that is selected and has been transferred to your iPhone, the playlist and all music included with the playlist will be removed from your iPhone. You can have the same song in multiple playlists, so if there is a song in a playlist that you deselect that is available in another playlist, the song won't be removed from your iPhone.

can i still use multiple playlists or am i screwed? i have lots of music i've put on from CDs and i don't want to sync and lose all of it because i don't have that list in my itunes library anymore
The music needs to remain in your iTunes library. A song can't be in an iTunes playlist unless it is in your main iTunes library. If you delete a song from your iTunes library that is in a playlist, it will be deleted from the playlist also. If this music is no longer in your iTunes library, it will be removed from your iPhone when syncing.
