iTunes Changed AGAIN: How do I change default MIDI soundfont now?

Greetings all. As soon as I get what I want out of iTunes, Apple takes it away from me. First, I want to convert MIDI files to MP3's, not M4A's, but you can't do that any more. Second, I used to be able to change the default MIDI soundfont in iTunes, but now I can't locate that feature any more (It's been a while, so I may have just forgotten how to do it).

I need to know three things: 1) What is the last iTunes version that converts MIDI files to MP3's instead of M4A's, 2) Where did the feature to change the default MIDI soundfont for the conversion process get moved to, and, 3) How do I downgrade?

I'm on a 2.3 GHz dual core G5 PowerMac in 10.5.6 with the latest version of iTunes.
