how do i delete apps off of my itunes??

Same way you delete anything from itunes. Highlight/select it and hit the delete key.

you delete them in itunes, then when you sync again, they'll delete from your ipod touch....

i think you may be asking how you delete them from your iPod, where the original post was about deleting from iTunes.
to delete from your Touch, either uncheck the box for that app under the applications tab on the right hand side when you plug your iPod into iTunes. OR hold your finger on an app icon, they will start to wobble, then you can move them around or hit the cross in the corner to delete.

to delete permanantly from iTunes, as it says above, either highlight it and hit delete on your keyboard, or right click and click the delete option that comes up.

Deleting them from the iPod is easy. Hold down an icon until they all start to shake, then tap the red X in the top left corner of the icon. All gone.
