You didn't delete "stacks," you just removed folders that were on the Dock.

A "stack" is just a folder. All you have to do is show a folder that you want on the Dock in a Finder window. Drag the icon for the folder you want in the Dock from that window and drop it to the right of the vertical line on the Dock.

For example (in more detail), double-click on +Macintosh HD+ on your Desktop. Under PLACES in the sidebar, select your user name. In the right side of the window, you will see the contents of your user home folder. If you want the Documents folder in the Dock, drag it from that window and drop it onto the Dock where you want it. You can do the same thing with applications you want on the Dock, and also with documents. Apps go to the left of the vertical line; docs and folders go to the right. Once you place them, you can move them around as desired.

If you don't want something on the Dock because you never use it, just drag it off the dock and drop it. The items in the Dock are just shortcuts to the actual apps, files, and folders on your hard drive. The folders are also called "stacks" because of the way they behave on the Dock. You can change how they behave by clicking and holding on a folder/stack (on the Dock) and changing its settings.
