Old mail is being deleted from Trash

I usually save old email in the Trash in case I need it later and I've noticed that periodically the oldest messages in my Trash are being deleted. I have my email set up as IMAP. In Settings, I have set "Remove" to "Never" and yet it still happens and I never empty the Trash. What is going on here? Am I going to have to create an "Archive" folder or something similar?

Most likely, a setting on the server. For example, with a Gmail IMAP account, deleting the email from the iPhone's Inbox moves the email to the Trash folder of the Gmail account, and items in that folder are automatically deleted after 30 days.

That's certainly a workaround. There may be others. Again, for example with a Gmail account, in Settings > Mail, Contacts, Calendars > mail account > Advanced > Deleted Mailbox, I can set deleted items to go into All Mail instead of Trash, and they will be archived there.
