How do I publish one site rather than all of them?

Is there a way to select one of my sites for publishing rather than having to go through the whole list of sites? Sometimes I've only tweaked one small thing on one site and when I click on the Publish button, every single file on every single page of every single site I've created goes through the publishing process. This takes too long.

What about publishing to a folder? I'm only using my own domain name on a few sites so I don't need to publish everything to a folder when I upload them to my FTP browser. Again though, I don't see any options on selecting only certain sites and it all gets published to the folder.
