iPhone backup storage locations (notes, files, email signatures, etc.)?

how does one back up notes, files, and email signatures on an iPhone? Where are they stored on a Mac. Does it all go into my iTunes library?

Unibody MacBook Pro, Mac OS X (10.5.5)

The backup file that iTunes makes stores that information. The file is located in ~/Library/Application Support/Mobile Sync/Backup. This file is not easily readable, but is the file used when you restore your phone from backup. This Apple article explains the backup: http://support.apple.com/kb/HT1766

To find a utility to get information from the backup file, do a Google search for "backup extractor Mac".
