I didn't read through the whole discussion, sorry, but as of December 2012 the simplest solution I know is to make Google the link rather than iTunes. Google explains how to set up an account to sync Mail, Notes, and/or Calendars with the appropriate apps on the iPhone (and I imagine that iPod Touch works the same way):

basically you can choose which calendars sync.
This also makes them sync be default to ical, without delegations, so it organizes it WAY better!
My problem was that some synced with my iphone and some did not, I used this address: https://www.google.com/calendar/syncselect and selected the calendars I wanted. You have to enable each separate delegate on your phone.
