I'd like some feedback from all of you on the real-world differences between the two models. Yes, I know the 16GB phone has twice the capacity as the 8GB model, thank you. How many of you have found 8GB to be restrictive? Do you download everything you come across? I will probably have a few songs on it, but will mostly use it for it's phone/email/apps abilities.
If you aren't planning on storing a lot of media, be it music, movies or photos, the 8GB will probably suffice. I had an original 8GB until March. I keep about 50 photos, 2 movies and 1383 songs and I had about 1GB free. I only used 4 screens of apps of the (I believe) allowable 8.
I've since upgraded to the 16GB, but that was only because I wanted white and it's not available in 8GB.

The only difference between 8 gb & 16 gb is capacity.
I have an 8 gb and have plenty of room left on it. Unless you're into storing your entire music library or video collection on a portable device, 8 gb should be plenty for email/apps and music.
Anoyingly I have just filled my 16gb up. I have had to take all the photos off so that I can fit all my music on. However thats the choice I've had to make.
I would advise getting larger than you think you need because after 6 - 12 months of use I think you'd be supprised how much data you have on the device. It's better to go for the large option than later kick yourself for only getting 8gb and want more....
