You can edit the .plist file using the application "Property List Editor.app" which Apple give free. It may already be on your computer (MacintoshHD/Developer/Applications/Utilities/). Try right clicking the plist file to Open with other... and see if this app is listed.

Open the entry for the com.nokia.6111 and make the few adjustments to match the entries on the post, changing the name of this entry from com.nokia.6111 to com.nokia.5130c-2 at the same time (bad luck if you buy a 6111 later - save a copy of the plist). Save the plist file. Quit Property List Editor.app and start iSynch. It works fine.
If you dont have Property List Editor.app then go to Support at Apple.com / Developer.
