I have resolved the poor performance/choppy signal/drop off on the 5Ghz network since the upgrade to 10.5.7 with the following actions: 1) Revert to 10.5.6 from time machine back up (Macbook only, iMac still on 10.5.7). 2) Safe boot to clear cache 3) Delete all network related plist files from /Library/Preferences/SystemConfiguration 4) clear NV RAM
With these actions both the Macbook and iMac no longer appear to totally drop off any more. However, with that resolved, another more subtle problem has made itself clear: every few hours or so, IP traffic over the wifi interface will lock up. I can ping the interface itself, but not the Time Capsule or router beyond it. No new IP connections can be established to anything on the wifi network. But, bizarrely, music playing via AirTunes continues to play just fine to my Airport Express that is on the same wifi network (can't ping it either). Sometimes the issue will last just a few seconds; sometime longer. Sometimes it will resolve itself; other times it doesn't (or takes too long) so I have to disconnect and reconnect to the wifi network. The issue occurs equally on 2.5Ghz and 5Ghz bands. It affects both the Macbook and iMac, but not usually at the same time. It never affects other devices using the same wifi network (2 iPhones, PS3 and Apple TV all fine). The only devices affected are the Macbook and iMac and the thing that they both have in common was they they have both been updated to 10.5.7.
Things remaining to be tried are: 1) Restoring both the router (Netgear 834) and Time Capsule to defaults (although all was fine before 10.5.7 and all is fine for other devices so this seems unlikely). 2) Test out UDP connectivity between the machines when the problem is occurring. This might be why AirTunes is unaffected. 3) Using the AirPort express instead of the Time Capsule to see if it is something specific to the Time Capsule.
