Convert iPhone 3G to iPod Touch?

I am considering upgrading my iPhone 3G to an iPhone 3Gs, but I was wondering whether it's possible to use the old iPhone 3G essentially as an iPod Touch. I have found people claiming this is possible with the original iPhone.

So, is it possible? What is involved with applying OS upgrades?

Mac Pro, Mac OS X (10.5.6)

Yes.

You will need to leave the no longer activated SIM card inserted - the SIM card that was used with the iPhone when the iPhone was activated in order to install a firmware update, or restore the iPhone with iTunes if wanted or needed.

On the site listed above, it states that it ONLY applies to the original IP (not 3G). Of course, now that the 3Gs is coming out, perhaps this will also apply to the original 3G.
