Installed 10.5, but now scanner & printer won't work...HELP!

Installed 10.5.7, from 10.4, but stupidly forgot to check whether new OS would allow printing on our epson7600 and scanning on our SCSI operated Flextight scanner... neither work, and that's all we use the computer for.... is there any way of going back in OS to 10.4? We have the original discs for 10.3 & 10.4... Please, any help would be much appreciated....

G5, Mac OS X (10.5.7)

Epson has great support for Leopard, including an update for a couple of different 7600 models.
