I use Parallels Desktop to run windows based applications that are not available for mac. When using Parallels I experience a complete slow down of all mac applications as well as the windows application that I am using. The computer also runs hot. Would the addition of more RAM resolve this problem? What is the maximum amount of RAM that can be installed? Is it something I can do myself?
Adding more RAM will probably help, but running a 2nd OS is going to eat up some CPU as well. The Maximum RAM depends on your model. On most models, it's pretty easy putting it in yourself.

What version of Parallels Desktop are you running? How much system memory (RAM) did you allocate to the virtual machine? How much RAM (total) do you have in the machine?
I have a MBP 15" Model 3.1 running OSX 10.4.11 with 2.2Ghz processor.
Parallels V4.0 Memory allotted = 512MB
Currently have 2GB RAM
Can I add RAM or would I have to replace the existing?

You'd have to replace RAM sticks - the MBP has two slots, which in your machine is 2 x 1 GB. You'll need 2 x 2 GB, then you can allocate more RAM to the virtual machine.
In the interim, you could allocate 1024 MB of RAM to the Virtual Machine. If you're running OS X 10.4.11 with 1GB =/= 1024 MB of RAM that's adequate enough to get by, as long as all you're running is Parallels when it's open.
As the recommendation of neuro, going to 4GB is strongly recommended if running an application like Parallels is important.
