App to: convert MP3 to sheet music? MIDI to sheet music? Transpose PDF's

Does anyone know of a free (or very cheap) program that will convert MP3 music files to sheet music? If not, a program that will convert MIDI files to sheet music? Also of interest would be a program that could read sheet music PDF's, transpose them to a different key, then reprint them.

 8-core Mac Pro, 10GB Ram, 4TB HDD (internal), Mac OS X (10.5.6), (All tools, no talent!)

I don't know about freeware or cheapie apps to do this, but I do know of a couple of things that I use to do a couple of these chores. Both Finale and Band in a Box will open Midi files and then display them as sheet music. You can then transpose them easily once they're in the app. You could then print them, in whatever new key your choose.

I found an old copy of Band in a Box and have it running in a Windows VM. I can now transpose MIDI scores... thank you.

I'm trying to teach myself to play the Chinese Erhu (basically a 2 string violin). Is there a way to set BB so it will take a MIDI score and break it down to a simple single note progression; i.e. like you would play on a piano with one finger? (Sorry I don't know the proper terminology... I'm starting from scratch.) I found several familiar children's songs in MIDI and I'm trying to simplify them. Here's an example: http://www.wilstar.com/midi/Twinkle.mid . I'd like to have BB change that into something I can play on the Erhu. Yes, I know there are simpler scores available for this tune, but if I can figure out how to do it with this one, I should be able to handle most everything.
