I don't think the Hardware UUID is something new with 10.5.8, only the fact that it's being displayed in the System Profiler. I checked on an iMac with 10.5.7 and the UUID was available via the ioreg command line, but not displayed by System Profiler. Once I updated to 10.5.8, that machine showed the hardware UUID in SYstem PRofiler as well.
They appear to be using part of that UUID for the ByHost preferences. Before (i.e., Tiger), I think those preferences used the MAC address.
