Junk mail does not always offer a "Not Junk" option. If I drag these emails into my Inbox, they continue to have the Junk Mail orange color, but still no not junk option.

I thought it had to do with the "Trust junk mail headers set by my ISP" checkbox, but unchecking this still results in junk mail (some valid email!) ending up in the junk folder.
Same problem here. Mark as Not Junk not even a listed option. I have the filtering from server (Exchange) set as well but it doesnt make a difference if it is on or off. "Not Junk" not available.
I have similar problem under Snow Leopard. There is no option to mark a message as not junk, despite the help system that references it. Is there a setting that needs to be reset?
I have the same issue. Even though the help system referenced it, there is not a Not Junk option - I've looked high and low. A number of my regular emails are getting marked as junk and I have no way to get them marked as Not Junk for future reference. I thought that perhaps dragging them to the inbox was maybe the transparent way of marking them as Not Junk. But they continued to be marked as junk. And some of these emails are from addresses that are in my contacts.
There aren't many answers in this thread - I have the same problem, a LOT of regular mail is being incorrectly identified as 'Junk' and I only have the options 'mark as unread', 'mark as flagged' or 'mark as junk' - no means at all to mark as 'not junk'.
Thanks for this suggestion, but 'enable junk mail filtering' is already ticked. I tried disabling it then re-enabling again but I still don't have a 'mark as not junk' option.
I had the same experience. Junk filtering was enabled. I disabled it. Re-enabled it and STILL no "Not Junk" option. This is just so weird. There must be some sort of internal software switch that's not getting checked.
I have to say this has been a real pain. I hope Apple is paying attention somewhere. I'm to the point where I may have to turn off junk filtering.
