How would I...

Achieve these two effects?
The first ones are like stutters with pitch bend? How would I do that?

And then second one, with the piece from Rihanna's Umbrella, there's a pitch bend and then the last song I assume has a pitch bend? How would I achieve these 2 different effects (stutter w/ pitch bend and plain pitch bend) with Logic Pro?

You can achieve this as simply as sampling the individual word from the original phrase ( in logic 9 just cut the word out, select it and use "convert to new sampler track" , then spread it across the whole keyboard and basically programme in a note rise or fall. The fall on that tune is programmed in 32nd notes. ( no pitchbend required )

Also logic has a new feature for the back stop ( or DJ brake ) effect too, select the audio you want to slow down, then just change the fade parameter to slow down and mess with the value till you get the desired effect.
