How many different email accounts can I put on the iPhone?

Cant say the exact amount but my iphone handles 6 various accounts with no problems. Understand if you have all them accounts checking email every 15 mins then it will drain a large amount of battery. you can get around this by mail forwarding to just one account it will save battery trust me. All the large email account providers Gmail, Hotmail etc all have this feature now available.

The Email is push so the second somebody sends the email you receive it. There are also lots of other features like calendar and contact push sync, 20gb of cloud disk space. Check it out at http://www.apple.com/uk/support/mobileme/

I'm looking into the iPhone and hope you can help me. If you have multiple e-mails can you have one account check for e-mail every 15 mins and the other check every hour?

No the check feature works for all accounts so the one you set is the one you get, the only difference is a mobileme account that checks using Push mail.

It works with outlook ok you have to download a app for windows XP, dont know how it compares just for the mac operating system. Download a free 30day trial they used to have one available.
