Have you tried resetting the iPod's touch's network settings? To do this, choose *Settings > General > Reset > Reset Network Settings*.
Double check your password. I had similar problem and did all the resets. Finally I called Linksys to see if they had a simple solution. Well the guy brought me to a screen on my computer which showed a long character code and he told me that was my password. Well, it wasn't the password I wrote down when my router was set up. I was so sure I had the correct password, but I was wrong. Anyway, it worked like a charm. So give your router company a call, you never know.
