How can I record my clarinet without using the voice recording option? Is there any specific way to record a clarinet, like special settings or something like that?

Usually one would use a mic into a mic preamp.

The preamp could be in an audio interface which is common for the home recordist.

And generally one would use a condenser mic. And never at the bell! Usually somewhere around mid point above the clarinet. And generally several feet back.

Can't tell from your post what you are doing so far....??

And of course rules are meant to be broken. Except the never at the bell is pretty solid advice.

What do you mean by "without using the voice recording option"? You record to a real instrument track, and you can (but don't have to) select one of the sound presets that GB offers. These are just collections of effects like EQ and reverb, and you can tweak them as much as you like. Since there is no clarinet preset, you might start with one of the sax or flute presets in the "Band Instruments" collection.
