Snow Leopard doesn't include a QuickTime System Preference pane so changing MIME settings is kind of difficult.
In your Home (User) / Library / Preferences folder you can open the
com.apple.quicktime.plugin.preferences.plist file (right click or Control click and choose TextEdit). Make sure that TextEdit is set to open files using "plain text".
Once open you can edit the different settings (changing true to false).
To reset the QuickTime browser plug-in to the Apple "default" simply delete the .plist file (a new one will be made).
