iPhone not organizing the same way as iTunes and Aperture

I'm of the belief at this point that there isn't a current solution to this topic, but I thought I would ask anyway.

Why is it that the iPhone will not organize itself the same way that you organize your playlists in iTunes and your photo albums in Aperture (which is what I use, but I'd assume that it is the same for iPhoto).

What I mean by this is, you can organize a playlist in iTunes to be listed by any criteria you set. For instance, you could organize by Album, by Artist, by Song, by any view option you select. This is great in iTunes, but why won't that information transfer over to the iPod on the iPhone (and I am assuming any iPod for that matter)? It seems that no matter how I set the lists to be organized on my computer, the iPhone just won't follow along. For some reason, the iPhone (and all iPods) don't seem to be designed this way, and I just can't figure out why.

This goes the same for the photos in my Aperture Library and on my iPhone. You should be able to organize and have that organization transferred over to your phone if you so desire. Doesn't seem like it would be hard to do. If this can be done, please tell me how.
