Your basic issue is that most email accounts will not let you send attachments greater than 10 to 20 MB, so your goal is to create a movie of less than that size. You may well know your own ISP's restrictions but you are probably unaware of your recipients ISP's restrictions, so you may need to aim at around 5 MB to be on the safe side.
It really depends on the length of your movie as to how small you can make it with various settings, but you might want to try exporting it to 3GPP format.
I usually upload video to an online storage site, (I use my idisk, but you tube is free) and then email the link to the recipient instead of the video itself.
