The iTunes app cannot be deleted. It is a native Apple app that is "part" of the iPhone OS. Perhaps it was moved to another home screen? You can change home screens by swiping your finger to the left (or right) on the current home screen. If you find it, tap and hold an app icon until they start to wiggle in their places, and then you can drag icons to customize your home screen, or move them to a different home screen. If you are sure that the iTunes app is not on any of your home screens, then make sure you have the current firmware version (3.1.2) and do a restore through iTunes.

Yes, a restore will delete all data on the iPhone, but your contacts, text messages, call history, and settings are backed up before you perform a restore (make sure you perform a backup before restoring). If your iTunes library and apps are on your computer, then they will be synced back to your iPhone after the restore is completed.

Before trying a restore, try this: Settings > General > Reset > Reset Home Screen Layout

EDIT: Nevermind 🙂
