You can nudge an object with the arrow keys, or select and hold the object and then depress Command to fine tune the placement. If you depress Command first, rotation is enabled.
There's no actual grid (à la AppleWorks) in Pages. Rather, there are alignment guides that show up under certain conditions.
I think you can probably get what you're asking for by disabling them in *Pages > Preferences > Rulers*.

To clarify for any future readers: this refers to the motion of objects being dragged. The default drag occurs in stepwise “jumps” (with the object settling exactly on underlying gridlines, whether they’re seen or not), whereas doing Command-drag lets the object settle anywhere between the stepwise “jump” positions.
