Quote level & Activity.

I have recently changed back to Mail after couple of years with Entourage. I am a bit puzzled with the following.

What exactly does Format>Indentations & Quote level do. I have tried everything to increase or delete quote levels but Increase and Delete are always greyed out.

I am using Mail v3.6. with 10.5.8.

eMac 1.42 GHz G4 Superdrive / 13" Mac Book Pro / Macbook G3., Mac OS X (10.5.8), 1Gb RAM

When you highlight a portion of an email, you should be able to change the denotation of that section's quote level, making it more or less. For example, if you are replying to an email that replies to one of yours, but that email doesn't distinguish between what you wrote and the response, you can highlight the part you originally wrote and choose "Increase" under quote level to differentiate the two authors.

Most likely if the options are grayed out, then you're either a) not composing an email or b) not highlighting a section to change as you compose.
