Performance Not Great, Logic Board Issues?

I got a MacPro Early '09 back in April, upgraded from a G5. So I own Final Cut Studio and was finally happy to run Color on a proper workstation. I've been using FCP all the while with no issues but I've noticed an unfortunate amount of lag with color. thought perhaps that it was the fact that was using HDV media with only 3 GBs of RAM. So I did an upgrade. Here's my current config:
2.66 Ghz Quad
640GB 7200-rpm Serial ATA 3Gb/s
8 GB 1066 MHz RAM
NVIDIA GeForce GT 120 512MB
It's the minimum config but I thought it'd still be good enough. Even with this, I can color grade but there is lag when I play a clip. The lag is quite noticeable too. It gets choppy about every second. I can get by with it, but I was hoping with a machine like this I could do more than get by. Am I doing something wrong?
