Problem is that I can't drag music/audiobooks etc onto my ipod.

instead of trying to drag & drop, sync playlists and audiobooks to your iPod.
browse through the various tabs for music, videos, etc. and put a "tick" in the box next to items you want on your Pod, then hit sync. see this KB http://support.apple.com/kb/HT1351

Might this involve me losing any of the music on my ipod? I have over 200 songs on there I want to keep but that came from my library in Australia and that I won't have access to for over a month.
Since I posted this I found in the 1st gen manual that you can't switch from windows/mac without syncing your ipod & losing all your music... is there any way around it? I'm scared to try anything at the moment!
When you say first gen ipod, do you mean the original ipod from years and years ago?
Or do you mean first gen ipod touch? Ipod touch is not formatted for Mac or windows, but you can sync with only one computer.
For all other ipods:
" Using an iPod formatted for Windows on a Macintosh computer is not supported. "
