How to get rid of weird extra spaces between lines

I have seen this issue crop up from time to time and can never figure out how to escape this odd mode. Here is a reproducer: If I compose a new email, then click at the end of a line in my signature, then hit enter, an extra space is generated -- there is a blank line before the cursor. No matter what I do, I cannot get rid of that blank line without deleting the new line I started. I know this is an odd example, but it's reproducible, so I chose to use it. I have seen this occur in other situations, and I want to know how to get out of this "double spacing" mode that sometimes happen. I hope this question is clear.
I know it's some sort of text format, because if I copy and paste it elsewhere, the extra space disappears...

I'm not sure if this is the same issue but worth a try. I have this problem when I copy from Word and paste into Mail. If I set the email at plain text, I can get rid of the extra lines and then reset the email as rich text. Shouldn't need a work-around IMHO, but that's the only answer I've found.

Which leads me to a rant... I'm a longtime, loyal Mac user but I really dislike Mail, AdBk and iCal. I've used Entourage for years and still prefer it, but now I need to sync two computers and an iPod Touch with Mobile Me. Know it can be done with Entourage but I don't want to jump through the hoops.

I feel incredibly limited and increasingly frustrated with Apple's applications--little bugs like this one and the big issue of not being able to sync To Do items via the expensive MM. Apple is obviously not going to improve the apps or make it easy for us to use a MS product. Would be nice if they would either help us out or set us free. ;-}
