Can you connect a ps3 to your Mac using apple tv?

No
AppleTV is a media extender for iTunes to view media from itunes on your TV.
It does not have a TV tuner/digitiser and is purely an output device not a video input device.

You could use open source DLNA software to stream video from your Mac to your PS3 (as long as it isn't DRM protected iTunes video).
No but you can with 'Playbackformac' just google it it costs about $35 and you can stream Music / Pics and Movies. It will let you conect to PS3 Xbox etc

I'm not quite sure what you mean by this - do you mena connect to the Mac to access streaming media or perhaps you were wondering if the AppleTV can behave as a wireless extender to give network access to the PS3 - it can't.
If you are looking for media server solutions there are several available that run on Mac, some free some commercial.
Free include:

The only hit I get for Playbackformac is this thread.

Perhaps you give up too easily. If you had searched for playback for mac you might have found this link:

Having just tried the Playback for Mac demo, I have to say I am not impressed. It couldn't play DRM protected iTunes files (no surprise), and I got more error messages than successful playbacks with it.
This open source PS3 Media Server works better on my iMac and it's free:
