How long does the iPhone Erase All Content and Settings feature take?

If I erase all content and settings (around 8gb worth) does anyone know how long it takes to complete? And if I then chose to restore from backup would everything be restored? for example texts? Thanks for any replies.

Yes, text messages can be restored from backup. This article: http://support.apple.com/kb/HT1766 provides details about the types of data stored in the iPhone backup.
