Old address in Mail app - where is it coming from?

When I compose a mail message on my iPod touch and enter a name into the To field, it brings up an old address which to the best of my knowledge is not in my current list of contacts. Does anyone know where it gets this address from (history?) and if so, how I can remove it?

2.4 GHz Intel Core 2 Duo, Mac OS X (10.6.2)

The Mail app on the iPhone/iPod Touch does have an option to clear previous recipients. The only way to remove these cached email addresses from the Mail application is restoring the iPhone/iPod Touch as a new phone/iPod. If you restore from backup, the cache is also restored.
